  5. I know most people slingin’ dogs don’t have much time, but if you do stick your burned finger in flour for 5-10 minutes. The burn will be gone. It really works.

  6. If I get burned I stick my finger in a glass of cold beer. The top layer will get warm so you have to drink that off little by little. It usually takes two or three glasses before I feel better. Try it – it works!

  7. SWEEEEEEEEET! Nothing is worse than reaching for a customers order and getting burned through plastic deli-gloves, then jumping and throwing a lid halfway across the parking lot! Happened the other day.

  9. The knob in the pic looks to be metal. My first thought was heat transfer also.
    John H. Do they get hot? I would thing wood or a plastic would be less hot.
    Keep up the good ideas ya’ll.
    By the way, what is everyone doing about steaming the rolls. The holes in the plastic bag over the wet towel thing don’t work too great for me. The pan is getting so hot it melts the bag! Other ideas?

    Because most health codes prohibit utensils coming into contact with food to come into contact with something else.

    So if you use the tongs to lift the lid and then insert the tongs into the HOT water and grab a dog… you just potentially contaminated your entire pan of dogs.

  11. I have a Victor cart with roll up lids and a plastic handle on each lid. When I see potential customers, I will lift the cover to let some steam out. This will get there attention and the smell will seduce them my way. Doing this over the course of your shift, you will learn fast where and how to put your hand, when lifting the lid as the steam is escaping. I usually lay my meats in a fashion where I have a small gap in between the sausages so that I can also have my buns on top of the meats and the steam will penetrate. I keep space between buns also. If you always do it the same way you can open your kettle and grab a sampling of your products to show customers with out even looking.

  12. To Tim’s Dog House, I use a separate Harbor Freight double burner stove (same stove used on Steves design) with steamer pans and perforated pans. I take the buns out of the plastic set them on a damp towel with a dry one on top of the buns to protect them from condensation of the lid. I turn the flame off when the buns get nice and warm. It was trial and error. I did this in Chicago winter and hope that the buns won’t need steaming as the muggy summer approaches. Gotta go and buy some handles. Mr. Tiki
