It’s cart rehab time! (Or cart building time if you don’t already have one.)
One upgrade that is easy to do and makes a huge difference is adding a custom cutting board.
Cutting boards are made of food safe polyethylene and health inspectors love them as a food prep surface.
Polyethylene is easy to cut with a jig or circular saw, easy to drill, and easy to mount on your cart with a few stainless screws.

We bought one of these this past summer. No cart should be without one! They are reasonable and the turn around time is quick. We got the white board.
We use Sysco for our custom-cut cutting boards, but you can get them at www.webstaurantstore.com in a variety of colors and sizes/thicknesses.
our health dept. is fussy you can use this type of board until the surface gets cuts in it, then since one cannot clean it(even soaking in bleach) the boards must be thrown away and new one bought. wood boards are better since as the health dept says “you can sand the cuts out and refinish them”. check local health depts because once your board shows any sign of discoloring or heavy cuts they could make you change it out. If I was to use a cutting board on my cart I would buy a nice piece of hard maple to use health dept would love it
plus I read somewhere a while back hard maple has a natural chemical in that helps keep the wood free of germs (?) sell em’ all
Great point. These polyethylene boards can be sanded also.
