Dear Steve – here is a picture of our Chicago Dog as promised, we do not use a poppy seed bun as we are located near all of the city, county, state and federal courts and the facility people feel the “seeds” could call pigeons!?!?! People are raving about our dogs – I will also include a couple pictures of us and from our corner! This is the real downtown deal!
Susan has over 20 yrs. of experience in the culinary world. She graduated at the top of the class at Sterling Vineyards school of Wine and Hospitality where she studied with well known Chefs and one of the few Master Sommeliers in the country. She has worked with renowned Chefs such as Phoenix’s own Eddie Matney. Her passion for cooking and meal planning and a wonderful host, made the choice to become hot dog dealer a natural one.
Renee has an eclectic background of culinary experience, starting at the age of 16 as a pantry cook in a restaurant owned by Green Bay Packer great Fuzzy Thurston. She then trained and traveled nationwide for T.G.I. Friday’s restaurants for several years. 25 years of mechanical engineering made her super jaded and the rest, well stay tuned. Renee’s natural gifts for entertaining, cooking, and grilling all culminate in her progression to successful hot dog dealer!

The dog looks great! I am curious as to what kind of cart that is…is it a home built one? I ask because I see the wheels are flush with the sides underneath the cart eliminating the need for fenders. I always felt that they get in the way.

Hi Susan & Renee, My eye’s may be deceiving me, but is that Downtown Phoenix ? Sure looks like it to me, If so what corner are you at, I occaionally have to go downtown to the IBM building and would love to stop by and grab a Dog from you (Too bad about the poppy seeds though)

I didn’t know that Poppy Seeds attract Pigeons. There has to be at least one Government Regulation that doesn’t make sense or it just would’nt be Chicago!!!
Love, the Cart, great job. Another rumor regarding poppy seeds is that when an HR department sends employees for a random drug test…poppy seeds are considered culprits for tipping the scale to a positive reading! My Cart is about 96% complete and I’m so exciting to start selling.
Looks great – couple suggestions
1. Looks like the Mexican sport pepper? typically they are large and tuff in the skin. Be sure to check with distributor for the authentic version. Two per dog as they are typically smaller. If you have any needs dealing with your distributor call your Vienna rep Steve Andreakos 303-588-8402 ( Let him know Chris from Roy’s Chicago Doggeries gave you the number)
2. Looks like your using 7/1 or 8/1 ? – if so balance your dog flavors with the toppings I don’t mean psychically but with amount. not only will the create a mouth-watering dog for you but will also effect your food cost.
3. Vienna makes a plain bun I suggest you use them for the quality. I will not get into to much detail but it is a far better bun that is made for steaming. ( take your buns off your steam lid, note in the photo the bun is cracking)

Chris, I 2nd your suggestion about calling Steve Andreakos of Vienna Beef Company. He is in Denver, same as me, and he is a great guy, easy to work with and very friendly and supportive of those who want to carry Vienna Beef Company products.
I’ve never heard about poppy seeds tipping the scales to positive on a random drug test, but neither have I heard about poppy seeds attracting birds. I think those most legislators are idiots. For example, here in Denver, they want to pass a new regulation for mobile food vendors that says that they must carry on-board 3 gallons of fresh water for every hour that they are operating. Holy cow, Batman! 3 gallons per hour of operation?!?!
I work from about 10am until 4pm most days, unless I am going for the late night folks who are hopping between the bars and clubs until they close, then I work from 9pm until 3am. So, I would have to carry 18 gallons of fresh water on-board with me. That’s just impossible to do. Can you imagine the weight? Going back and forth to the commissary is absolutely not feasible just to refill my cart with fresh water. Ridiculous! I don’t leave the water running constantly on my handwash sink.
