I grate my own hot dog cheese from blocks, rather than buying the kind that’s already shredded.
But my circular blade got damaged and I need a new system.
Any recommendations for quick and easy cheese graters? Maybe you could ask the vendors in your newsletter.

I used to use grated cheese for my dogs but I must confess I never grated it myself. I bought the pre-shredded cheese in bags. I found it somewhat difficult to apply to the dogs as it would clump badly unless I kept it very cool.
I have since moved to Easy Cheese as the product of choice for my hot dog cheese. It is made by Kraft and comes in aerosol containers. It’s definitely not “gourmet” but it is health department approved just about everywhere, needs no refrigeration, and you can make cool designs with it on the hot dog, LOL. I like the fact that it is quick and easy to apply, and doesn’t make a mess on my cart.
That being said, I still believe that fresh grated cheese is the best way to make a true “gourmet” cheese dog, so kudos to you Dave for going the extra mile!
OK slingers, what say you? What kind of hot dog cheese do you use? Do you grate it yourself, and if so what device do you use to grate it? Please share your best hot dog cheese ideas in the comments below!

We use the same cheese on our nachos & dogs.
Its comes in one gallon cans.
It’s thick, but loosens up when warmed up in the steamer.
It has good flavor & is really cheap.
You can get this or other brands @ wholesale clubs.
No shredding for me matey.

Yes, I do the same as first mate Jim. I get the nacho cheese sauce in the #10 can. It’s one of my best sellers, especially with chili. It’s got just a touch of tang, and if the want it hotter I give them Franks hot sauce.

I use a shredded Mexican blend and get nothing but thumbs up on my chili cheese dogs! I used that goo crap on a Philly steak and cheese special I ran and people liked it on that but to be honest it doesn’t compare to Mexican shredded blend I buy. tony

I purchase the FINELY shred cheddar. It’s Real cheese which makes my customers very happy. I tried the canned nacho cheese but wasn’t pleased on how it holds up in steam table the next day! I always had to throw it away at the end of the day and start fresh the next day! A waste of money! People will pay more for fresher better condiments.

You may lose some @ the end of the day, but It’s so low cost the mater is mute.
Shredded or easy cheese cost a lot more.

OH, I forgot to mention I used to use shredded, but as you pointed out, it never lasted long without clumping and there was a thin line between too cool and too warm to keep it from doing so.

I, too, am a goo fan. I am planning to put a reuben dog on my menu and have my out for a swiss cheese flavored goo product (maybe some sort of pre-melted fondue).
As far as the shreds, if I need large amounts in a hurry, I find that the grater attachment on my Cuisinart works pretty efficiently.

I am new to the hotdog biz and I became friends with a very good vendor in the next town.I had a chance to watch him a few times before I went out for the first time.He grates the cheese right on the hotdog right in front of the customer and they love it.I think I will do the same next year.
Definitely gourmet. It’s a whole experience!
We are located in Guyana South America. Yummy Dogs is owned and run by a former US Naval Officer. We buy cheese by the slab and grate it ourselves each day using an old fashioned grater like the one shown in the header of the post. takes about 30 minutes to grate about 3 lbs of the stuff.
I have used both grated and the nacho goo cheese. Both were received well. I found that of you thin your goo cheese with milk it it’s creamy and will be good for more than one day because it does not get brown and burnt around the edge of your pan. I am going to try the aerosol canned cheese. I paint the cheese on and call it the “Rattle Can Dog.” Blessings Chappy

I agree Corey. You should figure in your own labor when calculating what your cheese is costing you.
The cheese, any cheese from Wisconsin cant be beat! I try to use a Gehls cheese from a bag,can be poured into clear plastic squeeze bottles, warm it up in your warm hot dog water to keep it loose and smooth Also often Krogers sells Gehls cheese in smaller containers for under five bucks The bigger bags cost more, can also be bought at GfS which for customer service rates top of the line to help you out! The smooth runny cheese blends in well with your hot dog sauce, has a strong eye appeal to customers Remember presentation of a perfect looking hot dog will bring more repeat customers in for a long time!
