What a great attention getter, and getting attention is the name of the game in the hot dog business. Word of a gimmick such as this spreads like wildfire in the local community. Just what we’re looking for, right?
But I always wondered where to find one of those guns?
Dave Plante of Dave’s New England Coneys just turned me on to this deadly cool looking piece of stainless steel culinary hardware…

Hey Steve,
In the Seattle area, a huge seller out here is what they call a Cream Cheese Dog, top it off with whatever you like, especially dill relish.
Anyway, after being bugged by many of my customers for this item, I tried to source a cream cheese dispenser. The local restaurant supply store had one at a cost of $125 (ouch).
To make a long story short, I found what I was looking for at Bed, Bath & Beyond. It’s for cake and cupcake decorating and costs only $24 (Wilton – Dessert Decorator Pro). Completely stainless steel, comes apart for easy cleaning and the best part – it really works. Who knows, maybe other Hot Dogger’s out there can find a different use for this great tool.
For best use, I’ve found that Whipped Cream Cheese is the ticket.
Another cool thing is that depending on what you put in the dispenser, it comes with about six different tips so that clogging should not be an issue.
Anyway, my wife popped off the attached photo showing off our new Dogger-Tool.

We’re in the greater Seattle area and serve 2 types of Seattle/Cream Cheese Dogs. One has cream cheese, a pickle spear and sliced green onions. The other has cream cheese, salsa and banana pepper slices. Hopefully we’ll be able to saute onions to put on the cream cheese which is very common.
I’m delighted to read about the cake decorating gizmo which can dispense cream cheese for me. The only glitch is that I need a larger amount right down the middle of the hot dog (quite a bit is used in a Seattle Dog) so I’m hoping I can get a different attachment for the tip. You better believe I’ll be getting one all the same. I can’t wait to use it!
FYI, we sell to soldiers at Fort Lewis Army Base in Tacoma, many being processed to deploy to Iraq and Afghanistan. GO ARMY!!

For those who might not have access to a Bed, Bath and Beyond, it might be helpful to know that Michael’s Arts & Crafts in the Seattle area has a large cake decorating section. I imagine that’s so with other larger craft stores also such as Jo-Ann Fabrics and Craft Stores, etc.
I’m against violence of any kind. If you look closely you can see that Dave has already used this weapon on his mustard squeeze bottle. I suspect the mustard did nothing to warrant this treatment. I’d be more sympathetic if Dave had shot the ketchup.

We don’t need no stinkin’ squeeze bottles!” No. Wait, how about……..! I’ve got a million of ’em! Ah, but the dogs are a sizzlin’ and I got to go. Great idea Dave. Mr Tiki.

If you want to keep your costs down on cream cheese, here in Az $6.50 a 2 lb loaf, here is what you can do.
Let the brick of cheese it to room temp. cut it in 1/4 ‘s and then get 10 oz. of soda water. has to be full strength and full of bubbles. Not take your kitchen aid with the balloon wire whip attachment. Start with a little soda water in the bottom and one piece of your quartered cream chesse and whip it. Stop scrape and turn the bottom, add more soda water. Continue doing so 1/2 of the soda water and 1/2 of the cream cheese is whipped to your consistency. Now do it all over again with the second 1/2 of the cheese and soda water. Doing it in sections allows you to adjust it if its too soft. All bagel shops who offer flavored cream cheeses do this.
Hope to cut costs.

clean up**** must first wipe bowl and wire whip clean with paper towels first then wash and sanitize. The cream cheese will kill your clean dish water.
To Brook @ Slap Happy Dogs; per the tips available for this dispenser, 4-5 of them will not work unless modified, but the other two work just fine. If a heavier stream of cream cheese is needed, we simply take off the tip attachment giving you a heavy .50″ of pure cream cheese delight. But again, this is just a tool – other dogger’s will undoubtedly use this for condiments other than cream cheese.

I have used a Wagner Paint Sprayer to Place Chocolate Stencils on dessert Plates!! I have used Beater Attachments with my Power Drill to Do Bulk Pancake Batter!! Sometimes the you need the right tool for the wrong Job….
I am still in the dream stage of my Hot dog business! I had the idea of adding cream cheese to my hot dogs and the same day went on line and stumbled on to a website introducing Biker Jim. I was as always unhappy to see my idea was already out there, but excited to see how he used the gun to apply it to the hot dogs. and I am glad to see the feedback on this newsletter. very helpful. Now if I can just get it off the drawing boards and on to the streets.
JOE ~ Thanks for the info about cream cheese. My questions are: a) why soda water (as opposed to plain water or even milk), and b) once prepared, does it have to be used up that same day or can it be used over a few days if necessary?

Brook~ Soda water is an inside secret, keep a small amount of cream cheese to be used at room temp. it will go farther. Also if you apply coldd cream cheese to something hot and steamy you will not get good coverage and it will get real messey.I usually whip 10 – 12 lbs of cream cheese at a time. Then I will put about 3 lbs each in there own air tight plastic ware. Lasts for about two weeks. The clean up takes awhile so I do it in a batch that makes sense for me.
Hmmm, Cream cheese and jalapenos, might make a Popper Dog?
I use this to stuff peppers with cream cheese! You can make easy little habanero poppers, stuff white habs or just about any other pepper with cream cheese. You can also fold in some chopped bacon into the cream cheese as well for a truly manly stuffed pepper.
